Roast Beef and Arugula

Foccacia with Cambozola, Roast Beef and Arugula (SERVES 4-6)

Ingredients:
  • 1 LOAF FOCCACIA APPROX 23CM (9") ROUND OR SQUARE
  • 350 G (3/4 LB) SLICED ROAST BEEF
  • 225 G (8 OZ) CAMBOZOLA, SLICED THINLY
  • 3 RIPE TOMATOES, SLICED THINLY
  • 2 CUPS OR 1 BUNCH OF ARUGULA LEAVES
  • SALT, PEPPER AND EXTRA VIRGIN OLIVE OIL

  Procedure:

    1. Split foccacia horizontally.
    2. Place roast beef on bottom half of bread.
    3. Top with thinly sliced cambozola , then arugula and tomatoes.
    4. Drizzle with olive oil then add salt and pepper to taste.
    5. Cover with top half of bread. Cut into wedges or squares to serve immediately, or wrap in
        foil or plastic wrap for later use.
    6. Enjoy!
