Soft-Ripened Cheese
Soft-ripened cheese, or bloomy rind cheese, is cheese that has been surface ripened so that they ripen from the rind inward, leaving their rinds thin, white, and velvety. Brie, Camembert, and Triple Cream cheeses all fit within this category.
