
Brie
Brie is a soft cow’s cheese that is named after the French province that it originated in. The curd is obtained by adding rennet to raw milk which is then heated to a maximum temperature of 37 degrees Celsius. The mould is filled with several thin layers of cheese and then drained over the course of about 18 hours. The cheese is then removed from the mould, salted, inoculated with moulds, and cellared. While Brie dates back in France to the 8th Century, it is so popular that it is now made all over the world, and Denninger’s carries the best varieties.
