Hams are first hand-selected for proper marbling and form. They are then cured with an aromatic blend of salt and spices, including coriander, pepper and juniper berries. They are then slowly smoked at a low temperature for many hours giving them a natural deep red colour and delicious flavour.
Black Forest Ham
Our famous Black Forest Ham is tumbled, cooked, smoked and is made with less brine than the competition. This creates a typically dryer ham, ideal for making sandwiches.
North Tiroler
The unique baking technique used sets this ham apart from the rest. Extra flavourful with a deliciously smoked and baked crust.
Virginia Ham
With this ham, we leave the rind on which gives it added flavour and juiciness. The rind is then trimmed prior to slicing at our delicatessen counter.
Maple Ham
Similar to our classic Black Forest ham, we infuse the meat with natural Ontario maple syrup.
