Denninger’s Family of Gourmet Smoked Hams

At Denninger’s, we have a long tradition of producing the best in specialty hams. Each ham is hand-selected and slowly smoked over aromatic hard wood chips. These hams stay moist without having an excess of water.

Our Virginia hams are exclusive to Denninger’s. They have a mild smoke intensity and saltiness. The whole de-boned ham is carefully placed into a net with the rind still on. This gives it a nice oval shape. The fat bastes the ham during cooking keeping it moist and tender and most importantly full of flavour.

A country style bone-in ham is a whole bone-in ham. With the rind left on to baste the ham while cooking keeping it nice and juicy. The bone adds extra flavour to the ham.

Black Forest hams are a bit more intense in smoke flavour than the Virginia ham and a bit drier. The rind is removed before they are put into the net for smoking.

Denninger’s exclusive signature apricot glazed hams are Virginia hams or bone-in hams with the skin removed. The fat is scored in a diamond pattern, studded with cloves and covered with a thick apricot glaze. The ham is cooked to bake in the apricot flavour and give it a beautiful golden brown colour.

Smoked Bone-in Ham

Our famous smoked bone-in ham makes a terrific centrepiece for your dinner gatherings. This flavourful ham bakes to perfection and tastes delicious.

Virginia-style Ham

Virginia-style ham is prepared with the skin on, is boneless, and is fully cooked. The skin and fat guarantees a moist and flavourful ham.

Baking Instructions For Virginia and Bone-in Hams

Preheat oven to 350F. Score outside skin into diamond shapes for presentation and to allow for the flow of natural juices. Bake covered with foil in water or ginger ale for approximately 30-40 minutes per kilogram (internal temperature of 150F). Remove foil during the last twenty minutes to brown the outside.

Glazing Instructions For Virginia and Bone-in Hams

Preheat oven to 350F. Peel the skin from the ham and trim the fat to a ¼ inch layer. Score the fat in a diamond pattern. Insert a whole clove in each intersection of the diamonds. Bake uncovered until lightly brown using water or ginger ale. Cover with foil and continue baking 30-40 minutes per kilogram (internal temperature of 150F). During the last fifteen minutes remove foil and glaze with your favourite ham glaze.

Carving Your Bone-in Ham

Place the ham on a large platter. Use a sharp knife. Make your first cut straight to the bone, starting at the hock, or small end of the ham. Carve very thin slices consecutively at approximately 45 degree angles to the bone.
