Marinade and Dressing

Marinades come in two varieties: wet and dry. A dry marinade is more commonly known as a “rub”, while a wet marinade is traditionally called a marinade. A wet marinade will generally contain acids that create enzymes in the meats that make them more tender, while infusing them with a particular taste. Marinating should always be done in a stainless steel or glass container due to these acids, and marinating should never take place in an aluminum container.

Dressing is most well-known as an accompaniment to salads, but may also be used to flavour cold vegetable and meat dishes as well. While the same is true for all gourmet foods, a well-made dressing completely transports a salad in a way that a conventional salad dressing can’t hope to compare to.

Many brands are sold as both dressings and marinades, since they pair equally well with meats and salads.
