Ham & Cheese Soufflé

  • 8 oz    Denninger’s Virginia ham slices, diced
  • 1 cup     Parrano cheese, grated
  • 6     eggs, separated
  • 1/4 cup     flour
  • 8 oz     Hewitt’s 2% milk
  • salt, pepper and nutmeg to taste


Separate eggs carefully. With an electric mixer, beat the egg whites until stiff. Whip yolks until airy and light in colour.

Combine salt, pepper, nutmeg, flour and ham in a separate bowl and mix to separate ham pieces.

Add milk, yolks and cheese. Fold 1/3 of the whites into this mixture. Fold the remaining egg whites gently into the mix. Rub baking dish with soft butter and dust with flour. Pour soufflé mixture into the dish.

Bake on middle rack for 30 minutes at 375oF until golden brown.

Serve immediately. Serves 4.
