Ski Queen

It was customary throughout Norway to boil whey to "prim" - a soft, sweet, brown cheese. Anne Hov, a farmer's wife, was the first person to think of pouring cream into the kettle of prim.

 

Usage

Ski Queen is slightly firm but flexible and can be cut with a cheese slicer. It is traditionally cut into wafer thin slices with a cheeseslicer and eaten on toast or crispbread.

Ski Queen for Gravy Lovers
Use Ski Queen in gravy and you will never want to be without again! Ski Queen will taste up your gravy or sauce for game, venison, calf or lamb meat.

Ingredients

6 cups of gravy in a deep sauce pan.
1 cup sour cream or double cream (hold back if preferred)
2 tlbs grated Ski Queen
1 tlbs cranberry jelly
1 tlbs fresh herbs

How to do...

Warm up the sauce on low temp. in a deep sauce pan and stir in the cream first, add the rest of the ingredients carefully one by one, taste.

Serve on the side of meat from game, venison, calf or lamb. Dont forget the seasonal vegetables.

 

 

Ski Queen Waffles
In the mood for something sweet and tasty? Something that everybody likes? Many Norwegians can't imagine Friday without Ski Queen waffle. Try it out yourself..

Makes 10 waffles:

Ingredients

100 g butter, melted
4 egg
4-5 tbsp. sugar
½ tsp. cardamom
400 ml white flour
½ tsp. baking powder
500 ml milk
Ski Queen

 

 

 

How to do...

Mix everything except the butter into an even batter and allow it to swell for at least half an hour. Add the melted butter and cook the waffles in a waffle iron. Cool on a wire grate.


Serve with butter and Ski Queen.
