Lebkuchen Tiramisu

1-1/4 cup Denninger’s Pomegranate Juice
1 cinnamon stick
2 whole cloves
3 egg yolks
2 pkgs vanilla sugar
3 tbsp orange liqueur
500 g Tre Stelle Mascarpone Cheese
3 egg whites
1 tsp lemon juice
300 g Wicklein Lebkuchen, cut in strips
cocoa for dusting

Pour pomegranate juice in a saucepan with the cinnamon and cloves and let simmer for 10 minutes. Set aside.

In a large bowl, whip egg yolks with vanilla sugar and orange liqueur, stir in mascarpone. In separate bowl beat egg whites with lemon juice until firm, and fold into to mascarpone mixture.

Dip each Lebkuchen strip into the cooled juice as you assemble the tiramisu. Layer half of the strips of Lebkuchen in a glass bowl. Pour half of the mascarpone mixture on the Lebkuchen. Add another layer of Lebkuchen and finish with the remaining mascarpone mixture. Lebkuchen Tiramisu can also be prepared in individual dessert glasses. Dust with cocoa. Refrigerate until serving.
