|3||lbs||Yukon Gold potatoes, peeled and cut into 2” pieces|
|6||tbsp||Stirling Unsalted Butter|
|Cheddar Cheese, shredded|
|1||tsp||freshly ground pepper|
|1||tbsp||fresh chives or|
Put the potatoes into a large saucepan and cover with water. Place over high heat and bring to a boil. Cook until very tender, about 20 minutes. Drain. Return to a low heat for 1 -2 minutes or until excess moisture evaporates.
Remove from heat and mash the potatoes in a saucepan. Add the butter, cream, garlic, salt and pepper and mix well using a large spoon. Stir in the cheese, and transfer to a serving bowl. Garnish with chives or parsley.
