Mashed Potatoes

Bothwell Horseradish

3 lbs Yukon Gold potatoes, peeled and cut into 2” pieces
1 cup light cream
6 tbsp Stirling Unsalted Butter
1/2 cup Bothwell Horseradish
Cheddar Cheese, shredded
2 cloves garlic, minced
1 tsp freshly ground pepper
2 tsp salt
1 tbsp fresh chives or
parsley, chopped

Put the potatoes into a large saucepan and cover with water. Place over high heat and bring to a boil. Cook until very tender, about 20 minutes. Drain. Return to a low heat for 1 -2 minutes or until excess moisture evaporates.

Remove from heat and mash the potatoes in a saucepan. Add the butter, cream, garlic, salt and pepper and mix well using a large spoon. Stir in the cheese, and transfer to a serving bowl. Garnish with chives or parsley.
