Potato Poppers

Swiss Raclette & Smoked Maple Black Forest-Style Ham


6 slices Emmi Swiss Raclette Cheese, cut in 1 inch pieces
12 small new potatoes
6 slices Denninger’s Smoked Maple Black Forest-Style Ham, cut in 1 inch pieces
olive oil
fresh thyme
salt and pepper to taste
cooking twine
12 chives
Maille Cornichons

Cut the potatoes in half and sprinkle with olive oil, thyme, salt and freshly ground pepper. Bake for 30 minutes at 350oF. Turn the potatoes half way through baking.

Remove the potatoes from the oven, and cover each half with cheese. Continue cooking until the cheese melts.

Remove potatoes from the oven. Place a slice or two of ham on top of half of the potatoes, and cover each with remaining halves. Tie assembled potatoes with a piece of twine or fresh chive. Place back in the oven for a few minutes, just to heat through. Garnish with a sprig of thyme. Serve hot with cornichons.
