Ribeye Florentine

6 slices Denninger’s Bacon, cut 1/2” pieces
2 shallots, chopped
4 cloves garlic, minced
2 cups baby spinach, wilted
¼ cup crème fraîche
1 cup panko breadcrumbs
1 tbs Denninger’s Steak Spice
2 large eggs, whisked to blend
4 Denninger’s Ribeye Steaks

In a large skillet, fry bacon until crisp and then drain on paper towels. In the same skillet, sauté shallots in 1 tablespoon of the bacon drippings until transparent. Place all stuffing ingredients in a food processor and pulse just until mixed.

With a knife, make a slit along one edge of the steak to the centre. Stuff the steaks and secure with a toothpick. Season with salt and pepper and broil approximately 8 to 10 minutes per side.
